Creamy fakin’ bacon n’ cheese mashed potatoes




Sweet Bean’s indulgent recipe for creamy vegan mashed potatoes recipe minus the meat and dairy will wow the guests at your holiday dinner table: it literally melts in your mouth. Use the fake bacon bits for added crunch, texture and salt.

Creamy fakin’ bacon n’ cheese mashed potatoes

 8 red potatoes, peeled

1 glove fresh garlic

¼ cup Earth Balance

½ cup vegan grated cheese

¼ cup unsweetened soy, almond or rice milk

½ tsp salt

½ tsp pepper

Fake bacon bits

 Boil potatoes in large pot of water. Drain, cool, then place in a Cuisinart. Add garlic, Earth Balance, cheese, salt and pepper. Turn on. Add milk while the Cuisinart is on. Puree until smooth. Serve in a large bowl or individual bowls with bacon bits sprinkled on top. Makes 8 servings.
