vegan cookie cake


It was Sweetie’s 7th birthday this weekend, which kind of required making him a cake. But I was faced with a contradiction that defies the nature of the birthday experience: Sweetie doesn’t like the stuff. Not vanilla, chocolate, red velvet, whole grain or anything in between.

In fact, the only junk he’ll eat aside from plain chocolate and Tofutti Totally Fudge popsicles (which are vegan) is chocolate chip cookies the all-American way: with white flour and sugar. So I did the only obvious choice: I made him a chocolate chip cookie caking using my loyal-to-the-death vegan, nut-free baking mix brand Cherrybrook Kitchen – their chocolate chip cookie mix. I dumped the entire batch into a pie sheet, spread it evenly and baked for 15 minutes.

Huge success: all three boys loved every bite.
