super simple sugar cookies

On the way home from preschool yesterday, B. asked, “Can we make sprinkle cookies when we get home?” I paused momentarily, then replied, “Why not?” Check out Sweet Bean’s  simple recipe for vegan sugar cookies I whipped up that is made with whole wheat pastry flour. I took us 10 minutes to mix the dough, and another 10 for them to bake at 350 degrees.

This easy baking project is perfect to do with kids for the holidays: bust out the cookie cutters and make any shaped cookies you please. We felt inspired to create a T-rex, a stegosaurus, a gingerbread man, some with chocolate chips for S, and a few traditionally-shaped round cookies with blue sprinkles and powered sugar on top.

super simple vegan sugar cookies

2 cups whole wheat pastry flour

1 cup sugar or Splenda

1 tsp baking powder

1/8 tsp salt

1/2 cup vegetable oil or Earth Balance

1/4 cup room temperature water

cookie cutters

colored sprinkles, jelly beans, chocolate chips, raisins, or any other food/candy items you want to use for decorations.

Preheat oven to 350 degrees. Mix dry ingredients together in a bowl. Add in wet ingredients. Coat a baking sheet with cooking spray. Mold shapes and decorate. Bake for 10 minutes. Let cool before removing cookies from tray.
