When in need of comfort food with a healthy twist, look no further than this shockingly simple 3-step recipe for chunky root veggie soup using nothing more than seasonal produce and a few kitchen staples for added flavor.

When I say 3-step, I live up to my promise:

Step 1: Wash, peel and cut your favorite root vegetables into 2-inch sized chunks. I used the last installment from my winter organic veg farm share – including sweet and white potatoes, carrots, and these magenta-colored watermelon radishes that positively glowed.

2. Put veggies in a medium pot with 6 cups of water plus 2 cubes vegetable stock and boil for 35-45 minutes, until veg chunks are tender.

3. For a little edge, fry a finely sliced onion in a pan coated with cooking spray for  3-5 minutes.

Scoop a hearty-sized portion of soup and broth into a soup bowl. Top with fried onions. Do not speak. Do not think. Just eat.
